Heart Warming Semolina for a Proteinic Breakfast

There’s something deeply comforting about a warm bowl of semolina porridge, especially on a cool winter morning. Topped with whatever I have on hand—berries, banana, nuts, or seeds—it makes for a nourishing and satisfying breakfast.

As someone who is always looking for ways to increase my protein intake from the start of the day, semolina has become one of my favorite breakfast staples. Made from durum wheat, even the non-enriched variety—which is my personal preference—contains a surprisingly generous amount of protein. Combined with its fiber content, it helps keep me feeling energized, satisfied, and light throughout the morning.

What Makes Semolina So Special?

Unlike common wheat, which is softer and milled into a fine flour suitable for cakes and pastries, semolina is made from durum (hard) wheat. This gives it its characteristic golden color and coarse texture, similar to polenta.

Traditionally used to make pasta and bread, semolina is naturally rich in protein, providing around 12–15% protein by weight. It also contains dietary fiber, important vitamins, and essential minerals. Thanks to its relatively low glycemic index, semolina can help provide steady energy and promote satiety, making it an excellent breakfast choice for those looking to avoid mid-morning cravings.

A Prebiotic Boost for Gut Health

As someone who is prone to blood sugar fluctuations, I appreciate how semolina provides slow, sustained energy. Its high fiber content supports digestive health and regular bowel movements, while certain compounds found in durum wheat may act as prebiotics.

One of these compounds, arabinoxylan, helps nourish beneficial gut bacteria. The Antioxidant Benefits of Ferulic Acid

My Favorite Semolina Breakfast Porridge

Whether it's winter or summer, semolina porridge is one of my go-to breakfasts. It's quick, nourishing, and endlessly customizable.

To make it, I combine:

  • ¼ cup semolina

  • 1½ cups boiling water

  • ½ cup coconut milk

I cook the semolina until it thickens, then stir in the coconut milk for extra creaminess. Finally, I top it with fresh berries and a drizzle of agave syrup. The whole recipe takes less than 10 minutes to prepare and keeps me satisfied for hours.
